Traditional Circus Style Goulash

1 – 1 ½  large onions, cubed

2 ½  tablespoons olive oil, divided

1 ½  teaspoon paprika, divided

1 tablespoon fresh chopped parsley

2 lbs. stew meat

½ cup red wine

½ teaspoon minced garlic

1 can diced tomatoes (about 12 - 15 ounces)

½ cup mushrooms, sliced

½ green bell pepper, sliced

2 carrots sliced about 1” wide (optional)

3-4 bay leaves

Sour Cream to taste


Heat 2 tablespoons olive oil, add onions, add ½  teaspoon paprika and parsley, sweat them all together. Move to side of pan add ½ tablespoon olive oil and add meat and wine. Brown meat and let wine evaporate. Add garlic and one teaspoon paprika. Add diced tomatoes. Stir all ingredients together. Add mushrooms, bell pepper, carrots. Add bay leaves. Salt and pepper to taste. Stir together and let simmer for at least 30 minutes – the longer the better!

Garnish with a dollop sour cream, chopped parsley and paprika

Serve over wide egg noodles.
