Cajun Gumbo Kabobs

Geier's Sausage Kitchen 

Marinade:

· 1tsp salt

· 2tsp garlic powder

· 2tsp paprika

· 1tsp black pepper

· 1tsp onion powder

· 1tsp cayenne pepper

· 1 ¼ dried oregano

· ½ tsp red pepper flakes

· 1 ¼ dried thyme

· 3 Tbsp minced garlic

· 2Tbs olive oil

· 3Tbs tomato paste

For Kabobs:

· 2 green peppers cut in 1” squares

· 1 yellow onion quartered

· 12 peeled, tail on shrimp

· 1 Andouille cut into 1/3” pieces

· 4 Okra, cut into ½” pieces

· 1 package of Everglades fry batter

· 6 kabob sticks

· 2 eggs

· 12 cherry tomatoes

Instructions:

Mix all the ingredients for the marinade into a bowl and add the shrimp. Let marinade sit for at least 1 hour if not overnight. While the shrimp is marinating batter and deep fry the Okra in the Everglades fry batter. Once the shrimp is marinated and the okra is fried thread the meat and veggies onto the skewer leaving space between.

Preheat the grill on high for approx. 10 min, then turn down to med/high heat. Grill skewers for 10 minutes, turning as needed, cook until vegetables are tender. Can pair with corn on the cob and long grained rice.
