BrewBurger's Buffalo to the Third Burger
Buffalo is about 90% lean, we use Local Free Range, Hormone and
Antibiotic Free Bison from Three Suns Ranch in Punta Gorda !
Makes 6 servings
⦁ 2 pounds ground bison / buffalo
⦁ 1 cup panko bread crumbs
⦁ 2 eggs
⦁ 1/4 Cup Worcestershire sauce
⦁ 1/2 cup BrewBurger’s Blazin’ Buffalo Sauce (or other if you absolutely must)
⦁ 2 pinch granulated garlic
⦁ 2 pinch ground black pepper
⦁ olive oil cooking spray
⦁ 6 ounces blue cheese crumbles
⦁ 6 Brioche Rolls, split and toasted
⦁ Preheat a Cast Iron Pan on high heat and lightly spray with cooking spray.
⦁ Mix bison, Panko crumbs, egg, Worcestershire sauce, 1 tsp buffalo sauce, garlic, and pepper together by hand in a bowl; form into 6 patties.
⦁ Spray the patties with cooking spray and sear until slight char on one side, about 2 minutes, flip then top with cheese; continue cooking until the cheese melts, about 2 minutes more.
⦁ Smother in Remaining Buffalo Sauce
⦁ Sandwich burgers between bun halves; dress with lettuce, tomato, pickles and/or onion
BrewBurger's Buffalo Cauliflower Bites
Buffalo Cauliflower Bites, a healthier alternative to chicken wings!
Makes 4 servings
⦁ 1 medium cauliflower, cut into bite-sized pieces
⦁ 1/2 cup flour
⦁ 1/2 cup water
⦁ 1 teaspoon garlic powder
⦁ 1/2 teaspoon salt
⦁ 1/4 teaspoon black pepper
⦁ 2 tablespoons butter, melted
⦁ 2/3 cup BrewBurger’s Habanero hot sauce (or other if you absolutely must)
⦁ Preheat oven to 450 degrees, spray a large cookie sheet with cooking spray
⦁ In a large bowl whisk together flour, water, garlic powder, salt, and pepper. Add cauliflower florets and toss to coat. Spread evenly onto cookie sheet and place in the oven. Bake for 15 minutes, flipping once halfway through. Remove from the oven.
⦁ In a separate bowl stir together melted butter and buffalo sauce. Add baked cauliflower and toss to coat. Spread evenly onto cookie sheet. Place back in the oven and bake for 25-30 minutes or until crispy, flipping once.
⦁ Remove from oven and let sit 10 minutes before serving.
⦁ Serve with your favorite dressing and enjoy!
