BarBosso’s &#$@!% Shrimp from Café BarBosso


6 Large shrimp

Rice flour

2 eggs, whipped well

2oz lemon juice

2oz white wine chardonnay

2 tablespoons butter unsalted

1oz Reggiano Cheese grated

4oz Mozzarella, shredded

3 tablespoons fresh chopped Italian parsley

6 Mild cherry peppers

Salt and Pepper

¼ cup vegetable oil


Dredge shrimp in flour, place in egg batter, heat oil to medium heat, place shrimp in and cook 45 seconds per side. Discard oil and add lemon white wine, cook 30 seconds, add butter and peppers, top with cheeses and place in 400 degree preheated oven for 2 minutes.
