Baked Penne Artichoke & Spinach
- 1 Penne Pasta
- 2 Tab Butter
- 2 cups Heavy Cream
- 1/2 tsp minced fresh garlic
- 1 cup Reggiano Cheese Grated
- 1/2 tsp nutmeg
- 2 cups Artichokes diced
- 2 cups Fresh Baby spinach
- 1.5 cups Fresh Mozzarella shredded
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/2 tsp black pepper
Preheat oven to 425
Cook 1 Penne Al Dente 7 minutes drain set aside
In a large oven-proof skillet on med/high heat add 2 tablespoons butter, garlic add heavy cream, add artichokes, nutmeg, grated cheese and cook 2 minutes.
Add Spinach and half of the mozzarella salt, white pepper and cook 1 minute stirring to incorporate ingredients.
Place in oven for 5-7 minutes.
