Baked Penne Artichoke & Spinach 

Cafe Barbosso 

Ingredients 

  • 1 Penne Pasta
  • 2 Tab Butter
  • 2 cups Heavy Cream
  • 1/2 tsp minced fresh garlic
  • 1 cup Reggiano Cheese Grated
  • 1/2 tsp nutmeg
  • 2 cups Artichokes diced
  • 2 cups Fresh Baby spinach
  • 1.5 cups Fresh Mozzarella shredded
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1/2 tsp black pepper

Directions 

Preheat oven to 425

Cook 1 Penne Al Dente 7 minutes drain set aside

In a large oven-proof skillet on med/high heat add 2 tablespoons butter, garlic add heavy cream, add artichokes, nutmeg, grated cheese and cook 2 minutes.

Add Spinach and half of the mozzarella salt, white pepper and cook 1 minute stirring to incorporate ingredients.

Place in oven for 5-7 minutes.
