Ahi Tuna Poke Nachos 


  • Tortilla chips
  • 3 oz fresh tuna
  • 1 cup Asian slaw
  • 2 oz sesame dressing
  • 6 shaved jalapenos slices
  • Soy pearls
  • 1 oz wasabi cream
  • Tbsp red onion
  • Tbsp cucumber
  • Tbsp tomato
  • 2 oz poke sauce
  • Pinch black n white sesame seeds
  • Poke sauce
  • 1 cup soy sauce
  • ½ cup sesame oil
  • Tbsp fr ginger
  • Tbsp fr garlic
  • Korean spice
  • Dry mustard
  • Salt n pepper


1. In a small mixing bowl take 3 oz of fresh tuna cut into small cubes , tablespoon of the red onion, cucumber and tomato diced small add that to mixing bowl and a pinch of the mixed sesame seeds.

2. Then take 2 oz of the poke sauce add to the mixing bowl . Mix all ingredients together and set in refrigerator for a few minutes (you always keeping the tuna cold).

3. In another small mixing bowl put the Asian slaw and sesame dressing together.

4. Now its time to build the nachos. Put a layer of tortilla chips on the bottom of a large round plate.

5. Take your slaw that is tossed with the sesame dressing and spread over the chips evenly.

6. Take your tuna mixture and put it evenly over the slaw.

7. Drizzle the wasabi cream.

8. Top with very thin slices of jalapeno on top (optional).
