Makes 4 Servings
Ingredients:
4 Steaks (Ribeye or New York Strip are my favorite)
1 ½ cups fresh Black Mission figs, chopped
¾ cup red wine
¼ cup water
2 tablespoons honey
¼ cup Goat Cheese
½ cup Butter, softened
1 Tbsp Chopped Chives
Salt and Pepper
In a saucepot, combine the figs, wine, water and honey. Bring to a boil, then simmer and reduce until it starts to get thick.
In a separate bowl, combine the butter, goat cheese, chives and salt. Set Aside.
Heat a pan with a small amount of oil on high heat. Season the steaks with salt and pepper and sear in the pan to create a nice crust, about 2 minutes on each side. Finish the steaks in a 375 degree oven until the desired doneness. Top the steaks with the confit, and then with the goat cheese butter. Enjoy!!
