11/22/12- Turkey Curry

2 cups Basmati Rice cooked as directed with 1/2 cup whole cranberries

Leftover turkey

1 jar stonewall coconut curry simmering sauce. Found at fresh market

1 granny smith apple diced skin on

1/2 diced onion

2tbsp butter

Melt butter. Sauté onions gently

Add apples and turkey

Add sauce

Simmer 5 minutes

Serve over cranberry rice
