9/17/12 - Red Curry Sword Fish

Sword fish Steaks 2 each 8 oz cuts

Vegetable blend 10 oz

Red Curry Sauce 6 oz

Butter 2 oz

Sear Swordfish in a hot skillet browning on both sides.

Remove from pan.

Sauté vegetables for one minute.

Add curry sauce and reduce, tossing vegetables frequently.

Serve Swordfish with Jasmine rice placing curried vegetables over the sword fish.

Red Curry Sauce

Red Curry Paste 1 each 5 oz Can

Coco Lopez 2 each 5 oz Can

Pineapple Juice 1 each 5 oz can

Bring all ingredients to a boil. Chill until ready to use.
