10/11/12 - Lemon Grass/Caribbean Grouper

4 filets of Grouper or Basa

1 red bell pepper, one yellow and orange

1 small red onion diced

3 tbsp cilantro

3 tbsp jerk spice

Juice of one lime

2 stalks of lemon grass trimmed and cut into ¼ inch slices

1 cup olive oil

In a sauté or sauce pan heat oil on med-high heat until shimmers and add lemon grass. Cook for 7 minutes and allow to cook for 3 minutes. Drain and discard lemon grass stalks. Add peppers, onion, jerk spice, cilantro and lime to oil. Set aside.

Preheat oven to 350 and place filets on nonstick pan and cook for 15 minutes. Remove and drape mixture over each filet. Serve with lime garnish.
