11/19/12 - Kogi Tacos

Ingredients:

2 lbs roasted pork diced

12 soft flour tortillas

1 purple onion diced

1 small head cabbage shredded

1 bunch cilantro diced

Kogi sauce:

2 cups Sugar

1 cup Soy Sauce

1/2 cup Rice wine Vinegar

1 tsp Sesame Oil

Method for Kogi sauce:

Mix all ingredients and bring to soft boil and simmer.

Method for Taco ingredients:

Salt and pepper 2 lb pork shoulder and roast slow cook in oven at 275 degrees for approximately 2 hours.

Let cool and dice into 1 inch cubes.

Place into simmering Kogi sauce for 10 minutes.

Assembly:

Warm flour tortillas in oven or place on grill to toast.

Build tacos with pork, cabbage, cilantro and onion.
