Vegetarian Rice Cakes

o 2 Cups cooked white rice

o 1 Cup Shredded Mozzarella Cheese

o 1 Cup Panko Breadcrumbs

o 1 Cup Egg Whites

o 1 cup diced and cooked veggies (Zucchini, Onion, Red Peppers)

o Pinch of Salt and Pepper

Mix all the ingredients above in bowl and form 6 – 8 Patties. Cook in non stick pan until brown on each side. Serve with green salad.


o 1 Cup Mayo

o 2 Tbsp Curry Powder

o ½ Cup Sour Cream

Mix all together in bowl and top each cake.
