Serves 4 (As Appetizer)
Smoked Gouda Quesadillas
4~6” Flour Tortillas
4 Ounces of Grated Smoked Gouda
¼ Granny Smith Apple (Finely Chopped)
4 Scallions Cut Into Small Rings
2 Tbsp. Unsalted Butter
Lay two tortillas on work surface. Place half the cheese on each tortilla, top with the scallions and apples. Place the other tortilla on top. Add butter to sauté pan and cook quesadillas slowly. When browned and cheese is melted turn over and cook until other side is browned. Cut into six triangles.
Black Bean Salsa
One Can Black Beans (Drained/Rinsed~16 Ounces)
¼ Cup Corn Kernels
½ Red Pepper (Chopped Finely)
½ Gold Pepper (Chopped Finely)
4 Scallions Cut Into Small Rings
2 Tbsp. Purple Onion (Finely Chopped)
Zest of One Lime (Finely Chopped)
Juice of One Lime
1 Tbsp. Extra Virgin Olive Oil
Fresh Parsley
Salt/Pepper to Taste
Mix all ingredients and allow to marinate for an hour.
