Shrimp sushi (ebi)

Serves 4 people

1lb raw shrimp shell on (21-25)

2cups of cooked rice (small or medium grain rice)

10 tbsp rice vineger

5 tbsp sugar

1 tbsp salt

1tbsp mirin

25 bamboo skewers

Mix vineger, sugar, salt, and mirin.  After rice is cooked add mixture and let it cool down.  Insert bamboo skewers on each shrimp.  Cook for about 2 min on salt water.

After cooked place it on ice water.  Remove skewer and shell.  Butterfly cut from belly and add small amount of seasoned rice.
