Lunch with Chef Judi: Carmel Cafe

Carmel Cafe is a favorite dining spot. Known for their Modern Mediterranean cuisine, Carmel Cafe has fresh seasonal dishes.

My favorites include Chick Pea Fries with Tomato Jam and Curry ASoili, Flatbreads, Burgers and Steak Fries. Prix Fix Sunday and Monday night menus 3 courses. $12.99 all summer. Wait till you try wine down Weds, but make sure you order those meatball lollypops. They are so good!

Mediterranean Ahi Tuna Salad

Serves 1

INGREDIENTS

  • 2 cups spring mix
  • 1 cups romaine
  • 1 each boiled egg, chopped ½”
  • 4oz fingerling potatoes, roasted, sliced ¼”
  • 12 each grape tomato halves
  • 10 each kalamata olives
  • ¼ ounce red onion, julienned
  • 8 each artichoke 1/8 wedges
  • 2 oz Mustard Chive Vinaigrette
  • 4oz Seared Ahi Tuna sliced

MUSTARD VINAIGRETTE INGREDIENTS

  • 1 Tbl shallots, chopped
  • ½ cup vinegar, white balsamic
  • ½ tbl mustartd
  • 1 tbl sugar
  • ½ tsp salt, kosher
  • ½ tsp pepper, coarse ground
  • ½ cup oil, canola
  • ½ cup oil, extra virgin olive
  • 1/8 cup chives, sliced 1/16”

MUSTARD CHIVE INSTRUCTIONS

Combine shallots, vinegar, mustard and sugar in blender

Puree on high speed for 15 seconds

With blender still running, slowly drizzle in canola oil and then the olive oil to emulsify

Remove blender to mixing bowl and whisk in salt, pepper, and chives

Pour in airtight container and refrigerate.

SALAD INSTRUCTIONS

In mixing bowl toss together spring mix, romaine, vinaigrette, potatoes, tomatoes, olives, artichoke wedges.

After tossing, mound high in the center of the bowl

Sprinkle eggs over entire salad

Add tuna slices cascading over one another across salad

Mound red onions in center of salad

Serve in chilled bowl
