Season steaks with salt and pepper. Lightly brush each steak with mustard,and crust with chopped herbs. Heat a large sautéed pan over high heat,add oil and butter. Sear the steaks until a nice crust has formed round the bottom. Flip the steaks and finish under a broiler.
