Cherry cola bbq sauce

½ can cherry cola

1 cup ketchup

½ cup honey

¼ cup rice wine vinegar

¼ cup ume plum vinegar

2 TBSP lemon pepper

2 TBSP hoisin sauce

 

Boneless chicken breasts (on sale at Fresh Market on Tuesdays this month for $2.99)

Combine all ingredients in small sauce pan. Simmer for 15 minutes or until a thick sauce has formed

Soak boneless chicken breasts overnight in 2 cups buttermilk

Drain and pat dry.

Place on medium low grill- season with Essence of Emeril and salt and pepper

Grill on both sides

Brush with bbq sauce and serve on mini sweet potato pancakes
