11/6/12 - Beef tenderloin skewers

Serves 1

Skewers made with beef tenderloin 3 each 1 ½ ounces per skewer

2 tablespoon marinade (recipe below)

For salad;

Grape or cherry tomatoes 8ea. Cut in half

Fresh mozzarella ¼ inch dice

Arugula cut julienne ¼ cup

Red onion julienne 2 tablespoons

Balsamic vinegar 2 teaspoons

Virgin olive oil 3 teaspoons

Salt and pepper to taste

1. sear marinated skewers in a hot pan(or grill) until browned on both sides, About 1-2 minutes for medium rare

2. Toss tomatoes, onions and arugula with cheese in oil and vinegar

3. Place salad in the center of a large plate and place skewers over the top, drizzle with unused marinade and serve.

Marinade

Makes ¾ cup

Soy sauce ½ cup

Sesame oil ½ teaspoon

Red pepper flakes 1 teaspoon

Lime juice ¼ cup

Honey 1 teaspoon

Chopped cilantro 2 tablespoon

Chopped pickled ginger ½ tablespoon

Mix all ingredients and stir well, save in refrigerator covered up to 4 days.
