Tips at the Venice Farmers Market

They even have a store in Osprey for real deal beef chicken and pork and ohhhhh those steak tips


> 4 cups sliced shiitake mushroom

> 2 shallots minced

> 3 cloves garlic minced

> 1Tbsp fresh thyme chopped

> 1Tbsp fresh rosemary chopped

> 1Tbsp fresh tarragon chopped

> 2Tbsp butter

> 2 cups fresh arugula

> 1/2 cup pecorino Romano cheese

> 1Tbsp Dijon mustard

> 1/4 cup olive oil

> 3Tbsp sherry vinegar

> Salt and vinegar


> Add butter and half the oil to a large sauté pan over medium high heat. Add shallots, garlic and cook for two minutes. Add mushrooms , half of the herbs and cook until the mushrooms become crispy. Pour the mushroom mixture on paper a towel lined plate to soak up any moisture. Season with salt and pepper. In a small bowl combine the mustard , remaining herbs, 1/4 cup Romano cheese, and sherry vinegar. Whisk in the remaining olive oil to make a vinaigrette. Toss the mushrooms with arugula and the dressing, season with salt and pepper. Serve with pecorino Romano cheese grated on top.
