Grill Lamb Chops with Black garlic demi and Roasted Tomatoes

Rub Lamb Chops with Olive Oil (2-3 Medium Lamb Chops per person)

Season with

½ Teaspoon Garlic

½ Teaspoon Rosemary

Salt & Pepper to Taste

Grill to Perfection

Sauce

Melt 1 oz. Fresh Butter

Add 2 oz. Olive Oil

Add 2 oz. minced shallot

Add

4 oz. Roasted Tomatoes

1 Tablespoon chopped black garlic

6 oz. veal Broth

Simmer to Reduce Sauce.

Stir in 1 oz. Unsalted Butter to Thicken.

Season with Salt & Pepper

Serve

Mint Pesto

3 pints mint leaves

1 pint basil leaves

½ cup pine nuts

1 ½ Tbsp. minced garlic

1 cup parmesan cheese

1 cup spinach

1 ½ cups EVOO

Procedure: Combine all of the ingredients in a food processor and puree. Season with salt and pepper to taste.
