SARASOTA, Fl (WWSB) - A perfect appetizer for New Year’s Eve to use up a few leftovers like cranberries.
You will need:
- 2 cups fresh cranberries
- ½ cup water
- ½ cup port wine
- zest of one orange
- ½ teaspoon ground cardamom
- ¼ cup sugar
- 3 sprigs fresh thyme plus more for garnish
- 4 ounces full fat and whipped ricotta cheese
In a small pot add cranberries, port, water, thyme and zest. Simmer until cranberries are cooked. Mash with a fork and add 2 Tablespoon fig spread or orange marmalade. Sprinkle in cardamom and remove from heat to cool slightly.
Remove thyme stems and gently using other fresh thyme leaves for garnish- remove from stem,
Arrange crostini on a platter and top with whipped ricotta cheese and then cranberry fig jam. Garnish with a tiny piece of thyme.
