Perfect appetizer for New Year’s Eve with Chef Judi

Chef Judi | Cheese Board with Crostinis Part 4

SARASOTA, Fl (WWSB) - A perfect appetizer for New Year’s Eve to use up a few leftovers like cranberries.

You will need:

  • 2 cups fresh cranberries
  • ½ cup water
  • ½ cup port wine
  • zest of one orange
  • ½ teaspoon ground cardamom
  • ¼ cup sugar
  • 3 sprigs fresh thyme plus more for garnish
  • 4 ounces full fat  and whipped ricotta cheese

In a small pot add cranberries, port, water, thyme and zest. Simmer until cranberries are cooked. Mash with a fork and add 2 Tablespoon fig spread or orange marmalade. Sprinkle in cardamom and remove from heat to cool slightly.

Remove thyme stems and gently using other fresh thyme leaves for garnish- remove from stem,

Arrange crostini on a platter and top with whipped ricotta cheese and then cranberry fig jam. Garnish with a tiny piece of thyme.
