Chef Judi | Blackberry Duck Breast Salad Part 4

SARASOTA, Fl (WWSB) - 4 duck breasts ( 2 per package at Geiers sausage kitchen

  • 2 teaspoons fall seasoning
  • 2 teaspoons Chinese all spice 

From Yoders produce salad ingredients

  • 4 cups spinach
  • 1 cup seedless red grapes
  • 1/2 cup candied almonds
  • 1 cup fresh blackberries
  • 6 Whole mini yellow /orange peppers
  • Arrange on a plate
  • Fan rested sliced duck and drizzle with warm dressing 

Dressing

  • In a medium saucepan add
  • 2 tablespoons tangerine jam
  • 2 tablespoons blackberry jam
  • Splash of Sherry vinegar
  • Splash of olive oil
  • Heat and adjust vinegar and oil
  • Season duck breasts and score

Dear in hot pan then place on rack over cooking sheet and finish roasting to medium rare ( about 10 minutes)
