A Thanksgiving Porchetta from Mattison's | Suncoast View

Ingredients

1 ea Niman Ranch Pork Belly

3 Tbsp extra virgin olive oil

¼ cup fennel seed, ground and toasted

¼ cup orange zest

1 Tbsp rosemary, chopped

1 Tbsp thyme, chopped

1.5 Tbsp kosher salt

1 tsp black pepper

Instructions

Score the fat side about a quarter of an inch in a hash-tag pattern. Season with salt, pepper, zest, and herbs, and rub down with oil. Place under refrigeration for 2 hours.
