Ingredients for Pumpkin Cake

  • 1 ¼ cups All Purpose Flour
  • 1 ½ cups Cake Flour
  • ½ tsp Baking Soda
  • 1 ½ tsp Baking Powder
  • 1 tsp Salt
  • 1 ½ cup Sugar
  • 2/3 cup Softened Butter
  • 1 Tbsp Vanilla Extract
  • 22 oz Pumpkin Puree
  • 6 ea Eggs
  • ¾ cup Milk
  • 1 ½ tsp Cinnamon
  • ¾ tsp Nutmeg
  • ¾ tsp Ginger
  • ¼ tsp Ground Cloves

Instructions for Pumpkin Cake

Mix all dry ingredients into a mixing bowl; add butter and eggs, mix until smooth. Add pumpkin, continue to mix until incorporated, scrape sides and bottom of the bowl, add milk and mix until smooth. Pour batter into 2 9-inch cake pans and bake at 350º for 35 – 45 minutes until firm to the touch. Set aside to cool.

Ingredients for Caramel Sauce

  • 3 cups Granulated Sugar
  • 1 stick Softened Butter
  • 2 cups Heavy Cream
  • 2 tsp Vanilla Extract

Instructions

Melt butter in a deep sauce pan over medium heat. Add sugar, increase heat to medium high stirring constantly until it is melted and has turned an amber color. Remove from heat and carefully add heavy cream, mix until smooth, add vanilla and place in refrigerator to cool.

Ingredients for Salted Caramel Buttercream

  • 1 lb Cold Butter, chopped into cubes
  • 2 ½ - 3 lbs Powdered Sugar
  • ¾ cup Cold Caramel Sauce
  • Kosher salt, to taste

Instructions for Salted Caramel Buttercream

Beat 2 pounds sugar with cold butter until light and fluffy and caramel. Mix well, if icing is too soft add more sugar and beat until desired consistency. Add salt to taste.

Ingredients for Candied Pecans

  • 3 Tbsp Brown Sugar
  • ½ tsp Cinnamon
  • 1 ½ Tbsp Maple Syrup
  • 1 ½ tsp Kosher Salt
  • 1 Tbsp Butter
  • 2 cups Chopped Pecans

Instructions for Candied Pecans

Place pecans on a baking sheet. Bake at 350º for about 6 minutes. While pecans are roasting, mix all other ingredients together and place in the microwave until hot and bubbly. Pour hot nuts into a large mixing bowl, toss well with hot sugar mixture, return to a baking sheet and bake for about 15 – 20 minutes, stirring every 5 minutes. Cool and keep in an airtight container until ready to use.

Assembly of Pumpkin Spice Torte

Cut crown off the cooled cakes to create a flat top. Slice each cake in half, to create four layers. Fill layers with butter cream and stack on top of each other. Place in the refrigerator until butter cream is firm; remove from refrigerator and spread a layer of butter cream on top and cover with pecans, gently press nuts into butter cream. Warm caramel in microwave until it's thin enough to pour over the top of the nuts and let it run down the sides. Place cake in the refrigerator until ready to serve.
