Ingredients

  • 2 med green papaya, peeled and seeded; sliced into ¼ inch slices
  • Oil to pan fry or grill
  • ¼ c. butter
  • 1 sm. onion, finely chopped
  • 3 tbsp flour
  • 2 cups milk
  • 2 tbsp. finely sliced basil +more for topping
  • 1/8 tsp. freshly grated
  • 8 oz. grated mozzarella
  • 8oz. asiago or blend grated

Instructions

  • Heat oil in fry pan, or coat slices with oil if grilling.
  • Working in batches, brown or grill slices till browed, 6-8 minutes. Set aside.
  • Preheat oven to 375°. Butter a 13x9inch baking dish.
  • For white sauce: in med saucepan melt butter and cook onion over med heat till softened.
  • Add flour; cook 3 min. until golden brown, stirring constantly.
  • Add milk, whisking to combine well; bring to boil. Lower heat and simmer a couple min.
  • Stir in basil, nutmeg, ½ tsp salt and pepper. Remove from heat.
  • Layer 1/3 sauce, 1/3 papaya slices, and ½ each of mozzarella and asiago, repeat layers.
  • Top with remaining sauce and zucchini slices.
  • Bake, uncovered, 40-50 min. until bubbly and brown.
  • Top with additional basil and sea salt
